After Isabel left at 11:20 am, I decided to make a cream of mushroom soup for lunch. I collected some of the larger Oyster mushrooms from our hanging bag. I fried them in butter with onions, until they were nice and tender. I added some cream cheese, a bit of milk and I threw in the leftover potatoes and carrots from last night's dinner with a pinch of salt, pepper and a dash of Worcestershire sauce. I combined everything into my Vitamix blender and let it blend for 6 minutes. I served it with grated cheddar cheese sprinkled on top, and some toast on the side. It made a nice change from my usual curry squash soup. It's now 2:30 pm and the rains have come so to keep myself busy inside the house, I'm baking fresh bread. I'll let it rise for a longer time to see if that helps make it lighter and fluffier. I'll keep you posted.
