![]() We're trying our hand at smoking some of our trout! We bought the smoker a few weeks ago and it took some time for Kevin to adjust and tweak it for optimal efficiency. Today was the day. Our friend, Roberto, came by this morning to give us some pointers. ![]() We placed them in the smoker at 8 am and slow smoked the trout until 3 pm. (the lid was only open long enough for picture taking, of course). ![]() Doing its thing... smoking as it should be. I'd like to take this opportunity to point out that this is what I mean when I say even when it's raining out, it's bright outside. Well, when I took this picture (under cover), it was pouring two feet away from me. It just looks like a sunny day, doesn't it? I love that! ![]() This picture was taken at 2:30 pm... nearly done. Only two fillets are ours. The others were caught, gutted and cleaned and sold to Roberto. He smoked his trout in our smoker today, just to show us how it's done... or how he does it. He came back to retrieve his portion and brought them home to vacuum pack them. He sells them to clients in San Jose, with his cheese. We tried ours, which we marinated in water, salt, pepper, sugar, lemon, Worcestershire sauce for a couple of hours. Well, it was so delicious! So tender, so flavourful... we'll be doing that again, for sure. Then Kevin smoked some cheese... that was awesome, too.
