![]() It's been a while since I've had a food post. This morning I was in the mood to make a salad. Our Romaine and Arugula lettuces are growing well and it was time to put some on a plate. I cooked some bacon until it was very crispy. I baked some beetroot then sautéd them with onions, sweet red peppers and walnuts with a pinch of sugar to caramelize it all. In a separate bowl, I combined the lettuce and some dried cranberries. I poured some honey/mustard/red wine vinaigrette on the greens, then the warm beetroot mixture onto the greens and the bacon bits... then topped it with some avocado pieces and cheese. It was my own concoction, and it took about an hour to prep, but it was worth it! Boy, was it ever yummy, if I do say so myself. I'll be making that again. Kevin liked it, too.
